Kelly's Potato Scallops

At our Simple Living Toowoomba group's morning tea and swap last Saturday, Kelly did a demonstration on how to make potato scallops for a rare 'treat' instead of buying take-away. She also brought along her new beaut Pressure Cooker for preserving to show us.



 Here is Kelly's recipe for potato scallops.
 
 
 
Actually I think we were fortunate to get measurements at all as Kelly is one of those 'good' cooks who just throws in a bit of this and a bit of that! However, I need actually amounts if I ever want to cook anything.  :)
 
 
Kelly uses a deep fryer which she has had for seven years. She is scrupulous about cleaning the oil as she cooks and when she is finished and quickly scooped out any bits of batter that broke off.
 
 
First she mixed the flour and soda water together. She cut reasonably large potato slices so that they wouldn't absorb too much of the oil. They were coated with the batter mixture .....


then went into the fryer for a few minutes until the batter was golden .....
 
 

 
 then drained in the fryer basket and placed on paper towels. They were very yummy and something you wouldn't eat every week but for a treat once a month or so they would be very popular and certainly were much tastier than take-away scallops.
 
 

 
We didn't have a real big crowd at the swap this weekend so there wasn't the usual variety of produce to swap but still we all got to bring home some organically grown vegetables or home cooked goodies.


I brought home some snow peas, chilli jam, eggs and jam drops. The jam drops didn't last too long once hubby spied them.
 
 
I took along a few packets of mandarins and there must be hundreds more left on the tree.
 
We are hoping to have a good turnout for the Natural Pest Control workshop on the 24th August. There haven't been a lot of bookings as yet so hopefully there are a few people in the region who are thinking of coming along but just haven't booked in as yet.   3. I will be looking forward to your review of natural pest control. I wish they would hurry up and invent that transporter from star trek! There are several things I would like to do or go to in other countries that I can't drive to!
