I used to make this dessert with cream but thought I would try it using homemade yoghurt instead.
Firstly make a fruit salad. I used orange, apple, rockmelon, banana, a few boysenberries the birds left us, blueberries and a handful of fruit and nut mix I had leftover.
Add yoghurt....whatever flavour you like or else just use cream..light of course :-) I made up some Boysenberry Easiyo Yoghurt.
Then I brushed some yoghurt around the sides of a tin and sprinkled coconut over it. The yoghurt helps the coconut to stick to the sides.
Add the fruit salad mixture, sprinkle coconut on top, cover and put in freezer until frozen.
Once frozen, I turn it out onto a cutting board, cut it into slices, put it back in the tin and into the freezer.
When you are hot and bothered in this heat and want something refreshing to eat you now have the perfect solution which is yummy with a little cream and a few blueberries on top. Wait till it thaws a tad and enjoy!
