Nasturtium Vinegar with Rosemary and Peppercorns

A few weeks ago one of the Down to Earth Forum members posted a link to Nasturtium Vinegar 
which looked very nice and, as we have lots of nasturtiums growing, I thought I would make up a bottle and see how it tasted.





 This tasty vinegar is very easy to make. Firstly I washed 2 cups of nasturtium leaves and a 1/2 cup or so of flowers and sun dried them for a couple of days although the recipe in the link just says to wash and dry them.




I then put the dried flowers and leaves in a large Moccona coffee jar which had been cleaned well followed by 2 tablespoons of black peppercorns and a couple of rosemary stems.

Then I covered this with 4 cups of white vinegar. Use a good quality one for this. Then it was stirred and put into a dark cupboard.

After a week or so I had a taste and thought I would leave it for a couple more weeks to develop a more peppery flavour.




At the end of next week it will be strained through a fine sieve, stored in a sterilised bottle and placed in a cool place until used.




This would make a lovely Christmas gift with a photo of a nasturtium and the date on which it was made on a pretty label.

    1. Hopefully Barb. However I have had nettle infusing in olive oil in the sun for a couple of weeks and strained it this morning and it is not green like I hoped :-(

  5. it looks gorgeous & delicious
    i would have to omit the peppercorns for myself as can't stomach those but one day will give more things ago, have calendula infusing in olive oil in the cupboard atm, for soaps later down the track

    1. I must remember to keep checking the vinegar out as it is in a cupboard I don't look in very often. I often forget about such things. LOL!

  6. I made nasturtiums in vinegar recently Chel but didn't think to wash them first. I consequently had some ant floaters. A lesson learned. Fortunately they strained out so I'll still use it.

    1. Hutchy, perhaps they would have added a little more flavour. Ha ha! I washed them then dried them under glass outside for a couple of days first.
