Gluten Free Jam Surprise Muffins

At our Simple Living Toowoomba morning tea last month, Margy brought along some Gluten Free Jam Surprise Muffins so I made up a batch this week and thought I would share the recipe with you.


 They must have tasted okay as there were none left in the container at the end of the day. I am not a great fan of gluten free flour and next time I will make them with ordinary flour as we aren't on a gluten free diet in this household but I know that many people are, so this recipe might come in handy.



The recipe calls for Strawberry Jam but I used the Jaboticaba Jelly that I made recently and it tasted just fine.

Jam Surprise Muffins (gluten free)

200g gluten free self-raising flour
100g caster sugar (I put in less)
1 large egg
75ml olive oil
150ml milk
1/2 teasp vanilla extract
40ml strawberry jam

For the sugar coating:
25g butter, melted
25g caster sugar

1. Heat the oven to 190 degrees.  Line a 12 hole patty tin with paper cases.  Next sieve the flour into a bowl and stir in the sugar
2. In a large jug mix together the egg, olive oil, milk and vanilla extract using a fork.
3. Pour the wet ingredients into the dry and stir gently together until just combined.
4. Put a teaspoonful of the mixture in the base of each paper case.  Top with a dollop of strawberry jam.  To with the rest of the muffin mixture.
5. Bake for 10 minutes until well risen and firm.
6. Put the sugar in a shallow bowl.  Brush the tops with melted butter and dip in the sugar to coat the tops.  

So there you have it if you would like to try it out. It tastes great with strawberry jam but just use what you have like I did.

I am writing this on Thursday evening and am scheduling it for Friday morning. The forecast is for 2C tomorrow and then 0C on Saturday and Sunday. Brrr! I am sure that my Northern Hemisphere readers would laugh that we find that cold but our house is very cold and we just use an oil-filled heater to keep warm since our wood stove died. We haven't had a really cold winter for a number of years so it hasn't really been a problem....until this winter! If we have more winters like this ahead of us we will have to invest in more heating especially as we are getting older.


This photo was taken around 10am on Tuesday and I found it in the bird bath. I hope no birds were thirsty at the time. :-) There will probably be ice there again tomorrow morning but I won't be up to see it. I am staying under the blankets!!!!!

  1. You poor thing! It is unusually cold isn't it? I was talking to a friend who lives south of Stanthorpe right on the border and she was saying they had -13C - made my hair stand on end! It has been cold at the farm and here at Boonah, but you're right, a wood heater makes a huge difference.

    1. Barb, it was supposed to be 0C tomorrow and Sunday but now the forecast is for -1C!!! I am going to move to Queensland. Hang on...I DO live in Queensland. :-)

  2. If I remember my metric lessons 0C is freezing - yes? That is cold enough to complain about rightly! I wish I could send you some of this heat we are having, it is in the upper 90's (37C I think), I wonder if I put some in a bag.....smile, I will just send you warm envious thoughts! Love the recipe but I am making the effort to once again not turn my oven on all summer! I will file it away for winter.

    1. Kathy, it certainly feels like it is freezing! The upper 90s is too hot, isn't it? Yes you can send us some warmth if you like. LOL!

  3. This looks yummy but I'm trying to keep down my consumption of fats and sugar. I'll file it away for when I have my health back to where I'd like it. Off to exercise the over weight dog now....well that's my excuse :).

    1. Robyn, I won't be making it again in a hurry although my son just asked if there were any left. Really? Of course not as they only lasted a couple of hours. If I have sweet stuff around it is just too tempting for me so I don't tend to bake very often.

    I was planning to make maybe jam drops with your jelly but this looks better! And it has been cold. Mister Simba will join you under those blankets I think. Stay warm.

  5. Thank you for this recipe as well, I'm going to make this on the weekend, our son is the only coeliac at home, so hopefully he will love them. He should, as he loves strawberry jam. Guida
