Mango Ice Cream

I was browsing on the Simple Living Toowoomba blog this week and came across the recipe for Mango Ice Cream that Margy our co-ordinator had made at one of our morning teas/swaps. I remember that it tasted very yummy but had completely forgotten about it until I saw the recipe on the blog. 


It is so quick and easy to prepare so I made some yesterday and couldn't wait for the taste test when it was frozen! Here is the recipe:

Mango Ice-Cream



1 cup milk

1 cup cream

1 egg

1 cup freshly sliced mango

½ cup sugar (I use dextrose)

½ teaspoon vanilla



Process all ingredients in a food processor until mixture is smooth.  Refrigerate 1-2 hours or until completely chilled.  Stir mixture again...put into ice-cream maker (or just blend again and freeze in a Tupperware container). Margy used an ice-cream maker and it gives a different consistency from the ice-cream put into the freezer.


All ingredients ready to be blitzed.




A little taste test was necessary of course before putting it into the freezer for a couple of hours.





Take it out of the freezer and beat it up again before putting it back until frozen. 



Then enjoy!

  3. You are very talented. This looks very doable and frugal too - so many ice cream recipes look way to complicated and the ingredients way to un-frugal. Being a lot further south than yourself, mangoes are rarely cheap or plentiful.

    1. I am flying to my daughter's place in NW Qld next week and will probably make it again with my granddaughters as they have a mango tree in the neighbour's yard up the back that drops mangoes on their side :-)

    2. Once upon a time there was a town, kind of nice, where a family lived, really nice. Most days they would go out in their backyard and find that mangos had magickally appeared on the ground, and they all lived happily ice-creamed ever after.

    This looks yum. I do like my ice-cream and mixing all sorts of things in it. Love the idea of Mango's in it. Diet, what diet?

  6. My son got an ice cream maker for his birthday this year and we've tried many flavours, but not mango yet! It would be the perfect time to try it as my husband has been bringing home lots of well priced mangos from the Asian markets. I wonder if mangoes are cheaper up your way?
    I guess if the fat content is an issue you could partially substitute with yoghurt?

    1. Hope you like it, Sue. Margy said it was a recipe of 'Rhonda's' and I said I hadn't seen it on her blog. Turns out it was a friend of Margy's called Rhonda not the Rhonda we know. :-)

  8. Kelly, our fruit shops are usually cheaper than the supermarkets for mangoes. I think they were cheaper when we were at the Sunshine Coast. Yes, you could try it with yoghurt too.

  9. Yes very cheap mangoes on the Coast at the moment, Chel. 3 for $5 - can't get much better than that. (Blinky)
