Frozen Fruit Salad Yoghurt - For Heatwave Relief

Like many other regions in Australia we are experiencing above average temperatures this spring. We have had a number of days in the mid thirties and have found ourselves gravitating to the fridge and freezer for cool drinks to quench our thirst and to find something cold and refreshing to eat. I remembered a frozen dessert I used to make when we had visitors years ago which was quick and easy to make.


I used to make this dessert with cream but thought I would try it using homemade yoghurt instead. 


 Firstly make a fruit salad. I used orange, apple, rockmelon, banana, a few boysenberries the birds left us, blueberries and a handful of fruit and nut mix I had leftover.



Add yoghurt....whatever flavour you like or else just use cream..light of course :-) I made up some Boysenberry Easiyo Yoghurt.


 Then I brushed some yoghurt around the sides of a tin and sprinkled coconut over it. The yoghurt helps the coconut to stick to the sides.


Add the fruit salad mixture, sprinkle coconut on top, cover and put in freezer until frozen. 


 Once frozen, I turn it out onto a cutting board, cut it into slices, put it back in the tin and into the freezer.

When you are hot and bothered in this heat and want something refreshing to eat you now have the perfect solution which is yummy with a little cream and a few blueberries on top. Wait till it thaws a tad and enjoy!

  1. Thanks Chel, that sounds delicious, I have been making smoothies with fruit (berries or mango), yoghurt, and a banana or chia seeds for bulk, I just use a hand blender and it works fine, no need to lug out the big blender, then take it apart and wash it...easy.
    I have been drinking lots of water, a few cups of tea, the odd home made iced coffee (minus the cream)but with ice cream...yuuum. sometimes a ginger beer, ginger kombucha or a coconut water is refreshing too.
    Little rice crackers with dip, hommus, salsa and the odd bit of brie, are nice when you just can't think about cooking, also greek or ceaser salad are pretty good , today I am making potato salad for dinner, cooking spuds now, as there is no way the gas is going on in the heat of the late afternoon.
    I have been sitting and reading, knitting or crocheting with a plastic milk bottle of frozen water tucked up at my side or near my back, it really helps keep the body cool , the ceiling fan is pretty good , but if I feel I can't cope ( I get nauseous) I go to the movies and have a coffee in a cool cafe and come home when it starts to cool down.
    Some rain would be very nice and with any luck it should start to cool down tomorrow, this is a heatwave in Spring....I don't even want to think about Summer, at least up here it cools down at night.

    1. Yes the cool breeze last night was just lovely. I resorted to going to the movies during that dreadful heatwave last summer. I would even sit through a James Bond movie with my son to cool down for a few hours :-) Thanks for the tips. Good ideas there, Margaret.

  2. I eat mostly raw food. Easy to prepare and have ready to go in the refrigerator. Not much meat, though, as I no longer live near enough to the spotless and fresh-in-your-face butcher. There I could go and get ground beef that he would grind from the parts he kept at near freezing. Man, that stuff was good.

    However, that fruit thing looks good and it sure is easy. I will bet that my grandsons will like it and because it is all fresh stuff, no extra sugars to mess with me.

    1. J, I am sure your grandsons would love it but you had better wait till summer. :-) I hear it is a little cold over there in the US at present. Hope you didn't get that heavy snow where you are.

    2. That missed us, but we were supposed to get rain, possibly icy, for the rest of the week and when I came out after teaching the art class, it was snowing. An hour later, after a horrible doctor appointment, there was ice crusting the car windows.

      I got provisions for a few days and it seems to have stopped snowing. Icy and slippery and only the beginning of several months of iffy driving, snow removal and cold, cold and more cold.

      You know, we have so much freezing weather that cold treats like the fruit salad stuff continues to be popular no matter how low the temperature. Of course, hot cocoa and tea with anisette biscuits and gingerbread men make for nice indoor afternoons. I can hardly wait to have those weekends with the boys.

    3. That weather sounds treacherous, J. However I guess you have all learned to live with it. Even though we complain about the heat we really do love the sun here which shines year round mostly.

  3. I expect you to help me remember this next July! :) My mom used to put fruit and juice in the popsicle forms and it was a wonderful icy treat, we weren't allowed to eat a lot of sugar! Your idea looks and sounds much more decadent without being decadent!

  4. Now Kathy, I can't remember what day it is never mind remembering to remind you. LOL! No, it isn't too decadent unless you smother it with cream or ice cream. You wouldn't do that though would you? :-)

  5. OK, you with the apparently fast dying brain cells, its Wednesday, OK! Nar, just kidding, thought id mess with your muddled head. Its Tuesday LOL I really should respect my elders but that's no fun at all.

    Yes, that all sound very yummy yummy yummy. Not too bad but im on a DIET here. No food photos.

  6. Ha ha, Lynda...I am sure you could eat this when on a diet couldn't you? Just don't add the cream. I don't have to worry about eating too much of it anyway as I just saw the tin in the sink! I think I had one slice 😄

    Looks like we are going to get a storm (tonight) to maybe cool things down. I love the idea of the frozen fruit salad, bit like a weis bar I suppose. As for staying cool, I've the hottest room in the house. I swear it's hotter than Hades arm pits. So I drink plenty of water that's been frozen, doesn't take long to defrost and I've been eating ice cream with a handful of fruit too. Need to lay off that or I'll put all my weight back on. To cool down I usually sit out in the lounge room where there's a small air conditioner. And just as it gets a bit towards night I sit out side with Simba or take him for a walk.
    Hope you are doing your best to cool down. Thanks for sharing.

  8. Shiralee, it is cooler already outside but the house is still warm. Hopefully the cool breeze will cool it down soon. Thankfully the cooler days start tomorrow and hopefully we will get some rain as well as the garden certainly needs it.
