Mulberry Cobbler with no added sugar

As we still have heaps of mulberries on our tree I have tried out a couple more recipes by replacing the sugar with dextrose and doing a bit of experimenting. I was very happy with the taste of the Mulberry and Yoghurt Dessert I made last week and we actually had it again tonight. May as well make good use of the mulberries while we have them. Another similar recipe I found was for a Mulberry Cobbler so I changed a few ingredients around and was quite happy with the result as well.


I would love to present gorgeous photos like the food bloggers do but alas, I have no idea how they do that but I am sure you 'get the picture' anyway. I probably should have used a smaller dish so that all the mulberries were covered but it still would have tasted the same. ;-) 

Here is the recipe I used:

Mulberry Cobbler with no added sugar

Mulberry mixture

3 1/2 cups mulberries
2 tablespoons dextrose
2 tablespoons plain flour

Topping

1 cup dextrose
1/2 cup butter
1 cup plain flour
1 tablespoon baking powder
1 egg

Preheat oven to 180C (350F)

In a bowl combine the mulberries with the dextrose and flour and mix gently. Put aside.

In another bowl cut the butter into the dry ingredients for the topping. Then add the egg and mix in.


Grease a baking dish and spoon in the mulberry mixture then add the topping. Bake for 30-35 minutes or until golden brown. Serve with cream or home made ice cream without sugar if you are being really good ;-)



I also cooked some Mulberry Muffins but once again misread the recipe but also once again, they were eaten before the end of the day regardless.



There are still a lot of mulberries left on the tree but the flying foxes are having midnight parties in the back yard and leave their calling card...



....so I avoid picking any fruit that is near the droppings. Still the tree is so huge that there is plenty to feed both ourselves and the local wildlife.




I saw some nice begonias and a few other flowers in the garden today and took some photos but not one of them was really decent. The hippiastrums always look stunning though regardless of the photographer's skills or lack of them ;-)

Only five sleeps till I see my grandchildren on Monday. It will take me some time to become acclimatised as it is already about 37C up there in the North West. My little grandson is on the move and trying to walk so I think Nanna might get a lot of exercise next week. LOL!

  2. I am picking mulberries this week. Ours are so much smaller than yours but still tasty. I hope to bring enough inside to make something. I am guilty of picking and eating...

    Thank you for the recipe Nanna Chel, I will substitute dextrose for honey in mine as that is what is in my pantry.

  3. Mulberries have so many good memories for me. Mother used to make copious mulberry pies with NO added sugar as she said the mulberries were sweet enough (and so they were). The freezer used to be loaded with these pies.

  4. Oh i've never had mulberries before but your cobbler looks gorgeous, i also use coconut sugar as a replacement as its a natural sugar and better for you, plus it has the most perfect amount of sweetness lol
