Prize winning zucchini slice

Now I am sure that most readers have made a zucchini slice but, until recently, I must admit that I never had. My girl makes it quite often and last year she entered her slice in the local regional show and won first prize! So on the weekend I gave it a try.
 


It is fairly quick and easy to mix up and cook and was very yummy with a salad. Here is the recipe which my girl uses. I am not sure where she came across it though unfortunately, so can't acknowledge the source.
 
Zucchini Slice
 
                                                              3 rashers bacon, diced
                                                              3 eggs
                                                              1 grated carrot
                                                              3 medium grated zucchini
                                                              1/2 cup corn kernels
                                                              1 cup cheese
                                                              1/2 cup olive oil
                                                              1 large diced onion
                                                              1 cup self raising flour
                                                              Salt
                                                              Pepper
 
Fry onion and bacon. Lightly beat eggs. Mix all ingredients together. Pour into a greased baking dish and bake at 180 degrees for 45 mins.
 
This recipe also cooks well in muffin sized tins.
 
 
All mixed up and ready to go into the oven.
 
 
Cooked and out of the oven with a bit of browning on the edges.
 
Now, if you cook this slice then don't be like me and forget to add the corn kernels. It tasted really nice without the corn just the same. At least I didn't leave out the eggs like I did recently when I cooked a quiche! I thought it looked a bit funny when I was putting it into the oven. :-)

  2. Elablue, I forgot to mention that zucchini was courgette in some countries. I hope your family likes the slice. I was just talking to my girl and she said she leaves out the corn too as she doesn't like it. I am not fond of corn either so may not add it when I make it again as it tastes nice without it.

  3. I make a zucchini slice similar to this. It's a good meal as it's thrifty, healthy, easy to do and tastes nice!

  4. I also make this both as a slice and as muffins, Lovely when you want something different to have with your soup. I also vary the ingredients like you have with whatever I have in the kitchen. Thanks for posting it as I need a reminder to make them a bit more often than I do. By the way they also freeze beautifully. I just put them in a sealed plastic container and in they go.     1. Welcome Sandra. Yes, you could add some other bits and pieces to it to clean out crisper in the the fridge:-). I should make another one and put it in the freezer too for the days when I don't feel like cooking.

  5. I had never heard of 'slice' but it sounds like something I will like! It definitely goes in the 'to try' pile. If it helps I forgot the flour in brownies once - they were very thin! :)

  9. I think I will make this for lunch tomorrow. I have six dozen eggs sitting here waiting to be used. The chooks are laying more than I can use at the moment.
