Red Onion Pickles

At our recent Simple Living Toowoomba morning tea and swap, David brought along a couple of  bottles of pickled onions that he had made so we had a taste test on some crackers and they well and truly passed the test. I thought I would give the recipe a try as the pickles were a little different from the norm as David had used sliced red onions.

 The mandolin attachment on my fake Nicer Dicer came in handy for these pickles as they cut the onion very finely. You do need to be very careful when using a mandolin though.

 
I asked Margy our co-ordinator, (who is David's wife) for the recipe so here it is if you would like to give it a try:
 
Red Pickled Onions 

1-2 red onions
3 tbsp white wine vinegar
3 tbsp sugar
Salt

Slice up the onion and put it in a saucepan with the vinegar, sugar and salt.  Bring this up to the boil, then remove from the heat and leave it for about 5 minutes to cool down and infuse.  If you want it a little softer leave it on the boil a little longer.    

 
I only had red wine vinegar and raw sugar on hand so used that but David used white wine vinegar and white sugar in his pickles but they still seemed to taste quite yummy nevertheless.

  2. I agree, awful nightmare inducing visions at the thought of using one. Though i have never used one. I think this might be worth a try. I love red onions.

  3. Ha ha, Barb and Lynda...I make sure I have the safety cover on which sits on top of the onion so there is no chance of cutting oneself. You can see it on top of the mandolin in the photo. It works really well even though it is a 'fake' Nicer Dicer. It makes it so quick to slice the onions.
