Sweet Potato and Ginger Soup

 A friend gave me the recipe for Sweet Potato and Ginger Soup recently so I tried it out this week and it certainly has a bit of zing in it! I think I was a tad heavy handed with the fresh ginger so will use a little less next time but it certainly is a different taste from the usual soups we have been having in this cold weather and I quite like it. 


If you would like to give it a try here is the recipe:

Sweet Potato and Ginger Soup

3 sweet potatoes
2 onions
2 T honey
1 T of grated ginger (or to taste)
Salt and pepper
Enough veggie stock to cover - approx 4 cups

Slice up and brown the onions
Add cut up sweet potato, honey, ginger, salt and pepper
Pour in enough vege stock to cover veggies
Bring stock slowly to boil and potato is soft
Blend up with a chunk of butter until smooth.
I didn't add the butter when blending but did add some Wheat Free RicePlus that we bought at ALDI a while back as I had put in too much water and wanted to thicken it up a little. The RicePlus is a mixture of pearl barley, white quinoa, long grain rice, white and red basmati and black rice. Well, it certainly thickened it up. :-) 
Give it a try and let me know what you think. If you like foods with a taste of ginger I am sure you will enjoy the soup on these cold winter days.
This morning I looked out the window onto the back yard and saw that our cockatoo friends are back again. Since getting stuck into one of our macadamia trees and dropping all the nuts off onto the ground a while back, they must have decided to return and finish them off and brought some friends with them. 
The photo is a bit blurry as it was taken through the window (which was grotty immaculately clean as usual ;-) and I also had to zoom in with the camera. There were actually eight cockatoos and two crows in the group and I have never seen so many birds together on the lawn before. The macadamia nut tree destroyers haven't been around for some time as there are no nuts on the tree at the moment nor on the pecan nut tree so they have been bypassing our place in search of other delicacies. 
It's back to the freezing mornings over the weekend but it should be a sunny day for the Camellia and Winter Market Festival at TAFE Horticulture Centre tomorrow and Sunday so, if you live in the Darling Downs region, it should be a great day out if you are interested in gardening.

  1. Great recipe Nanna Chel, we just dug up a bucket of sweet potatoes too. What a howler of a wind there is today. Good day to stay indoors.

    1. Thankfully it won't be windy tomorrow at the garden show like it was for Gardenfest. I am over this 'mild winter' that was forecast a couple of months ago. The Long Johns have been given a workout for the first time in many years.

  2. You probably wouldn't feel that zing if you had a cold. I like simple winter soups like this, affordable and usually items you have in the pantry.

  4. I like sweet potatoes and they are certainly better for me than regular potatoes. I'll have to give this a try as I could live on soups in Winter :).
